These are garlic scapes:

Garlic scapes are stalks that left on the plant will turn into flowers. They are edible and very tasty. You can do many things with scapes, including pickling them or making pesto. I usually make pesto. But with a twist that adds a bit of zing to the beast. There are many recipes online, and you can find those easily. But to such recipes I also add in other spring plants such as spring onions and radish bulbs and leaves. They really do as a bit of “zing” to the pesto, and make it even better in my opinion.

Oh, yes, I also add in walnuts from our walnut trees. So, the only things in this pesto that were not grown by me, on my land, are the oil and salt. Enjoy!
