This year’s total garlic harvest came to over 200 garlic bulbs of good size, with about 30 little ones that will be used pretty much immediately since I ran out of garlic from last year already.
Drying is pretty easy for me. Most bulbs get bundled into groups from 15 to 20 bulbs, tied and hung under the roof of our front porch. The largest bulbs are laid in trays to dry.
What is the temperature when you’re drying the garlic? I’m wondering why they dry rather than rot.

Good question. Ideal temp to dry is about 80°F / 27°C. Drying them in a covered well ventilated area helps keep them from over drying and avoiding rot. For more details see this University of Massachusetts Extension Vegetable Program web site: Garlic Harvest, Curing, and Storage
