Since I have had a lot of extra tomatoes this autumn, I have been very busy drying them. Drying fruits and vegetables to me is the ideal method of long term storage. Solar drying when I can, weather permitting, but electrical unit drying when not.
Some people ask me what I do with my dried tomatoes. A lot actually. They can be re-hydrated, and used in sauces, or can be eaten as a snack directly, or simply added as a pizza topping — only to name a few. And you can easily make “gourmet” dried tomatoes in olive oil as well.
