While my beets were actually planted in the summer, they are still going strong in my winter garden.
I consider beets one of the garden’s most disrespected vegetable. For no good reason. They are great in soups, salads, veggie burgers, etc. All parts of the beet is edible (root and leaves). And they really do well in the winter. For a beet, even if they get large, they are still great to eat. That is, like most root vegetables, they are good to eat till they bolt to flower, which will certainly not happen in mid Winter, so they are a great winter vegetable.


I love beets and they are very healthy 🙂
